Sean Hickey - Big Daddy Bacon

Tell us about yourself

My name is Sean Hickey and I was born in Burlington, ON. We moved to London in 1984 where I went to Fanshawe College and completed the COOKS apprentice program. After the program, I worked at a few restaurants then switched to the automotive sector. I worked in manufacturing for 17 years and now I’m back in the kitchen owning and operating my own food truck. I have four children and four grandchildren

Tell us about your business

Big Daddy Bacon has been in business for 4 years selling all things bacon. The food truck dream became reality this May (2019) and now I work on the truck full time. I brine and smoke my own back bacon, slow cooked pulled pork and developed our famous” bacon shots “. We even have bacon butter tarts and bacon chocolate chip cookies included on the menu. I’ve had lots of help from friends and family and currently only have one employee other than myself.

What led you to start this business?

I was a contestant on MasterChef Canada season 3 and finished top 12 – that sparked interest in getting back to what I love to do, cooking! So, my wife and I came up with a plan and with hard work and perseverance, we made it happen!

Was there something that drew (or pushed) you into being an entrepreneur?

It has always been my dream to own my own food truck. My wife gave me the support and nudge to go for it – she saw the talent (and tasted the food I created too!) She was my best critic when something wasn't just right.

I also received a mantra note from my mother and posted it inside my kitchen cupboard to see everyday: “work to build your own dreams or someone will hire you to build theirs.” This has been there since day one.

What were some of the challenges you faced getting started and how did you overcome them?

MONEY $$$!! you need lots of it and you must work hard and save!  As well, all the inspections and licenses you need to obtain before you even open is a hard process. Lots of maneuvering through the red tape was an exhausting and frustrating process, but we did it!

If you could sit down with any business leader or industry expert, who would you choose and why?

Anthony Bourdain who unfortunately has passed away, but reading his books and watching his television shows always took me to another place (literally) and listening to his journeys inspired me to keep moving forward.

Is there anything currently happening in the London business community that excites you?

The Food Truck movement. I feel like I got in at the right time! We still have some growing to do, but this London is an awesome city and the people who live here have embraced what we have to offer. The London Food Truck Association is a group of elite food trucks that are striving to make it easy for customers to book and find us.  I'm happy to be an active member with all the other local food truck owners.
